Carrie’s Famous Pesto

This recipe is simple and full of nutrients! I love to eat it with chicken and pasta the night before a big race as it’s light in your stomach.



1 ½ cups spinach

¾ cup basil

½ cup nuts (Pine Nuts or Pecans)

½ cup parmesan cheese

½ cup olive oil

½ Tbsp. garlic

1 Tbsp. lemon juice

¼ tsp pepper

¾ tsp salt



1). Chop the spinach, basil, parmesan cheese, nuts and about half of your olive oil in the food processor.


2). Add the rest of your olive oil, lemon juice, salt, pepper and garlic. Blend together.


Store any leftover pesto in the refrigerator. I hope you enjoy my recipe, let me know what you think!
